Secret Revealed to World’s Best Pancakes from the Brampton Inn!

We make a lot of pancakes here at our Maryland Bed and Breakfast: the Brampton Inn. Flapjacks; griddle cakes; souffle cakes;  whatever you call them, they are probably most peoples’ favorite breakfast item of all time. And of course they’re not just for breakfast either: who can argue with a  pancake dinner?

We have a few different recipes we like to use, but by far the most popular is our basic buttermilk pancake. We like to put berries in them, or grated apples and cinnamon, peaches, whatever is in season. Without trying to toot our own horn, our guests simply love these pancakes. Very often, people will ask us how we get them so fluffy, or is there a secret?

Well, it’s not a secret but it is important:

WHIP THE WHITES!!!

No matter what the recipe says, separate the eggs and whip the whites until they form stiff peaks. The yolks get mixed into whatever the liquid is. The whites are folded into the batter, and it becomes lighter. That’s the secret!

So, if you’re wondering what to make for dinner some night, why not try pancakes for a change? Here’s our Maryland bed and breakfast recipe for World’s Best Pancakes:

2 cups unbleached flour

2 tsp. baking powder

½ tsp. baking soda

2 cups buttermilk

¼ cup milk

2 large eggs separated

½ stick melted unsalted butter

1 tablespoon pure maple syrup

2 cups fresh or frozen blueberries or peeled and diced peaches

(Add the juice of 1/2 lemon and 1 tablespoon of sugar to peaches)

Pre-heat your griddle or pan.

In a large bowl mix flour, baking powder and baking soda. Set aside.

Beat egg whites until stiff but not dry.

Mix buttermilk, milk, maple syrup, egg yolks and melted butter.

Gently stir buttermilk mixture into the flour mixture. Fold in egg whites.

Make sure not to over do it. Fold in blueberries or peaches.

Lightly butter griddle and cook pancakes until the top bubbles, flip and cook other side until golden. Serve with real maple syrup.
